The return of Leeds Sauce!

We’ve started 2024 off as we mean to go on – full of exciting projects and events! 

Following the success of Popeye Collective’s project Leeds Sauce from Compass Festival 2022, we invited chef Jade Crawley from Fearns restaurant in Department, Leeds Dock, to create a twist on the original, which we then explored with guests in an intimate tasting evening. 

After tasting the original Leeds Sauce, Jade made a version of her own, trying to mimic the original as closely as she could, as well as then making four experimental versions: Leeds Sauce with orange peel and fennel, Leeds Sauce with dill and ginger, extra hot Leeds Sauce and super sweet Leeds Sauce. We tried the sauces with some delicious products generously bought by our guests, such as breads from Cellar Door Bakery and sausages from Sykes House Farm. 

To accompany the sauce tasting, Fearns mixologist, Hannah, created two cocktails for the group to try. The first was a rhubarb-based sweeter drink, inspired by the sauce’s rhubarb base, whilst the second had a more smokey flavour and was made using the sauce itself as a key ingredient.

We are so grateful for all the contributions and interesting discussions that came from the evening and would like to thank all our guests and Fearns for their generosity. 

As for what’s next, we have some really exciting ideas for the future of Leeds Sauce in the pipeline…
