'Beer is a key aspect of British, Yorkshire and Leeds culture and we are hoping to not only put some of its flavour into the sauce, but also capture some of what this drink means to Leeds and others in the city. Whether it’s a perfect pint of Tetleys Mild, a cold lager from a can or an IPA made locally. During the beer collection, we visited pubs along the Otley Run. As we collected beer we also collected stories from Both the pub workers and the locals: Where did you have your first beer? How do you feel about Tetleys? Lock-ins, uncles who propped up the bar, a first kiss... Then taking the beer to the Compass offices and adding vinegar mother, allowing it to ferment for months, ready to add to the first batch of Leeds Sauce.
